If you ask me about a perfect Sunday breakfast, it would be all about a lazy one in the bed, with a stack full of soft and fluffy pancakes with oodles of maple syrup on top. That’s it, or maybe a glass of fresh juice on the side. Pancakes simply spell indulgence – be it in any flavour. Besides the delightful sweet treat it is, pancakes are just so easy and quick to make for your morning meal. Moreover you can customise your pancake to suit your preferences- from maple syrup, whipped cream, choco chips to ice creams, choose to your heart’s content. What’s more interesting is that you can also make a savoury version of it by adding salt, veggies and more to the dish. Yet, I love the classic American pancake version - flour, egg, milk and sugar mixed together into a batter and the cooked like on a frying pan. It is then served hot with a topping of maple syrup or honey, along with fruits such as bananas, strawberries or blueberries. The simple flavours of fluffy pancakes make me drool each time. While it may sound easy, mastering the art of pancake isn’t an easy one.

1. The batter
The amount of ingredients and the mixing is key to perfect fluffy pancakes. So make sure to mix well. Keep in mind that less mixing can leave you with a batter with lumps while over mixing it can tighten it too much. The right consistence is essential. Make sure to leave the batter to rest for at least 30 minutes.
2. The rising agent
Do not forget the baking powder while mixing, it is what makes your pancakes fluffy.
3. Egg and egg whites
