Dhabas, for the uninitiated, are small, modest eateries. They are often located on either side of the highways but you can find many legendary dhabas inside your city too. How To Make Dhaba-Style Aloo Gobhi
To make this stellar recipe, wash and clean the cauliflower, cut them into medium-sized florets, and soak them in turmeric water for 15 mins. Wash it again with tap water. Peel potatoes and cut them into medium-thick slices. Heat oil, fry cauliflower and drain on a paper napkin. Then fry potatoes, and drain on a paper napkin. Then start with the masala, heat some oil in a pan, and add cumin and asafoetida. When the cumin starts to crackle, add ginger, sautee everything. Then add tomatoes and cook till tomatoes are soft. Then add all powdered spices, and throw in the potatoes and cauliflower. Cook till the potatoes and cauliflower florets are nicely coated in masalas. Garnish with coriander leaves and serve hot with naan, paratha or roti.
