Holi, as a festival, has a nonchalant nature, and it echoes in every element. It gives the celebrators a certain amount of liberty to experiment with the festive spread. After all, the core message of Holi is to spread love and joy and let go of any baggage that doesn't serve any purpose. Inspired by this facet of the festival Deepak T, Bar Manager Fox in the Field, Bangalore, has curated a menu of Margaritas that can be easily prepared at home. Sharing his fond memories of the Festival of Colours, he says, "Holi is the one day you are allowed to be messy. You are free and needn't be worried about being scolded by parents for staining clothes with colours."

According to him, the signature dishes such as gujias, samosas, and kachoris and drinks like thandai made at home always have his heart. Deepak, who started his career as a bartender at Toit, has mastered the art of fashioning immaculate beverages with his signature style. With years of experience as a mixologist, now at Fox in the Field Bangalore, he is curating new concoctions with unconventional flavours for people to discover and devour.

When asked why he chose to make margaritas for Holi? Deepak narrates that with the onset of summer, people are now looking for refreshing drinks to beat the heat. People's preference for a hot toddy and whiskeys are slowly shifting to cooler, more refreshing alternatives. Margaritas are the all-time favourite drinks. People trying to make this beverage at home often use artificial colours.

"The selection of fresh fruit margaritas at our hospitality property is ideal for enjoying a hot summer day. Instead of artificial colours, we choose fresh fruits like kiwi, mango, strawberries etc., as the core ingredient. We also make sure that fresh fruits are either locally grown or sourced from its area of origin like the Gondhoraj, for the Gondhoraj margarita, is sourced from Kolkata, to retain the authenticity of the drink."

There is an enhanced interest among Indians towards their environmental health. They choose a more sustainable and eco-friendly option for everything. Organic colours, flowers instead of colours (phoolowali or flower Holi), are gaining popularity these days. Likewise, it reflects in their food and beverage choices. For such people, fresh fruit margaritas are the best choice to celebrate Holi, and the colourful beverages also reflect the true spirit of the season, Spring.
