This quinoa pizza is perfect for kids. From the impressive mini shape to delicious taste, they will love to eat this healthy pizza in their lunch.

Ingredients
One and a half cups of quinoa
1 teaspoon avocado oil
2 large eggs
½ diced onion diced
½ cup sliced black olives
1 teaspoon minced garlic
1 cup mozzarella
1 tablespoon dried basil
1 tablespoon dried oregano
½ cup small tomatoes ( chopped and diced in smaller pieces )
½ cup marinara sauce
Method
- Boil one and a half cups of quinoa with 2 ¼ cups of water, then boil for 15 to 20 minutes until all the water is absorbed. ( 1 cup of raw quinoa makes at least 3 cups of cooked quinoa, so cook accordingly ).
- While quinoa is cooking, sauté onion and garlic in one teaspoon avocado oil for about 3 minutes or until translucent and tender.
- Preheat the oven to 350 degrees.
- Mix all ingredients except pizza sauce.
- Grease the mini muffin cups with cooking spray. Put one tablespoon of the mixture in each muffin cup. Press with the back of a spoon so the top of each muffin is flat.
- Bake for 15 minutes. Remove from the oven and cool for 10 minutes, then use a butter knife to run a knife around the edges and scrape off the pizza bites.
- Garnish with marinara sauce.
