Healthy Delight: Time To Relish On This Russian Chicken Salad

Salads are one of the meals that can be easily prepared for your lunch or dinner. However, a Russian salad is made with chopped chicken pieces, diced vegetables, and dress-up with mayonnaise. Ingredients:

  • 200 gm chicken (boneless)
  • 2 tbsp olive oil 
  • 2 medium carrots (diced)
  • 1 small capsicum (cubed)
  • 1 tbsp vinegar 
  • ½ cup peas 
  • 8-10 french beans (chopped)
  • 100 gm pineapple (chopped)
  • Salt and black pepper, as required

For toppings:

  • ¾ cup mayonnaise 
  • 2 tbsp cheese spread
  • ¼ cup cream 
  • Salt and black pepper, as required

Instructions: 

  1. Before beginning this yummy recipe, first, wash the chicken properly and drain out the excess water from it. Cut them into small pieces, and pressure cooker the chicken with ½ cup water and ½ tsp salt for 15-20 minutes, about 1-2 whistles. 
  2. Once the whistling is done, lower the flame and simmer it for 2-5 minutes. Now switch off the flame, keep it cool and transfer the boiled chicken pieces into a bowl. Shred the chicken pieces after 5-10 minutes. 
  3. In the bowl, add 1 tbsp vinegar and 1 tbsp olive oil. And keep that aside for a while. 
  4. Time to boil the veggies in the same cooker or pan, add 2 cups of water with ½ tsp salt, cook enough, then add beans, peas, carrots, and blanch them for 2-4 minutes. Turn off the flame, and rinse the veggies with cold water, and strain.
  5. Transfer them to a bowl, mix the mayonnaise, cream, cheese spread, salt, pepper and give a good mix. Now add chopped pineapples and shredded chicken and mix well. Adjust the seasonings if needed. If the consistency is thick, add regular milk into it.

Notes: 

  • You can alternately use potatoes, paneer instead of chicken if you’re vegetarian.
  • You can add more veggies, fruits to this salad. 
  • Also, you can use coconut or soya milk before serving if you think the consistency is thick.  
  • Put your salad in an airtight container if you want to enjoy it later.
