Cauliflower Rice Fried Rice Recipe

Ingredients 

  • 1 kg cauliflower (without stem)
  • 1 cup chopped scallions
  • 2 large eggs, beaten
  • 3 garlic cloves (minced)
  • 1 tablespoon minced ginger root
  • ¼ teaspoon red pepper flakes
  • ½ cup chopped carrots
  • ½ cup frozen peas
  • ¼ cup chopped cashews
  • 1 teaspoon sugar
  • 4-5 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • Salt to taste
  • 4 tbsp vegetable oil
  • 1 teaspoon toasted sesame oil

Method

  • Employ a food processor with a grating disc to shred the cauliflower. You could also use a box or hand-held grater with large holes. Keep it aside.
  • In a large non-stick pan, heat 3 teaspoons of vegetable oil
  • Keep the flame on medium and add the beaten eggs. Season with salt to taste
  • Scramble the eggs until they are thoroughly cooked. Take it off the flame, transfer it to a bowl, and keep it aside.
  • In the same pan, heat 3 tablespoons of oil and, setting the flame on medium, incorporate the garlic, light scallions, and finely chopped ginger
  • Give all the ingredients a good stir and cook for 4-5 minutes until they turn soft. Avoid letting it get brown
  • Now introduce the grated cauliflower, salt to taste, sugar, red chilli flakes and 4 tablespoons of the soy sauce
  • Cook for about 3 minutes, stirring frequently. Once the cauliflower "rice" is crisp-tender, add the peas and carrots and cook until they are warmed. Mix in the cashew, the eggs, the dark green scallions, the rice vinegar, and the sesame oil. Check the flavour and seasoning.
