In what is possibly the best way to eat cabbage, the technique of grilling and getting char marks on the leafy vegetable can be rather satisfying. Not only does the black grill marks contrast with the pale jade leaves that make it pretty to look at, the flavours of the cabbage transform completely and result in a tender, juicier vegetable. While grilling might not be a popular way of cooking cabbage in India, where it is often spotted in the form of sabzis, thorans, salads and stir fries, it is a refreshing break from the overcooked mush we’re accustomed to. We came up with three delicious ways in which you can incorporate more grilled cabbage into your day-to-day meals and enjoy the vegetable in all its glory.

Cabbage With Blue Cheese, Bacon & Honey

This version is a play on the classic blue cheese salad made with thickly cut wedges of iceberg lettuce. The grilled cabbage version brings a smoky flavour that complements the salty pungency of the blue cheese and bacon, with a sweet afternote from the honey.

Ingredients

  • 1 small cabbage, cut into 8 wedges
  • 150 grams blue cheese
  • 2 tablespoons honey
  • ¼ cup bacon bits
  • Salt and pepper to taste
  • Olive oil

Method

  • Drizzle some olive oil on the cabbage wedges and sprinkle some salt and pepper.
  • Grill on a hot pan for 3-4 minutes on each side. Remove on to a plate using a pair of tongs.
  • Sprinkle a generous amount of bacon and blue cheese and drizzle some honey on top. Serve warm.

Grilled Cabbage Coleslaw

Although a standard coleslaw used raw, shredded cabbage, this version incorporates tender yet crunchy grilled cabbage that imparts a charred flavour to the slaw, making it a perfect accompaniment for barbecues.

Ingredients

  • 1 small cabbage, cut into wedges
  • 1 carrot, grated
  • 1 small onion, sliced
  • ¼ cup mayonnaise
  • 2 tablespoons vinegar
  • Salt and pepper to taste
  • Olive oil

Method

  • Drizzle some olive oil on the cabbage wedges and sprinkle some salt and pepper.
  • Grill on a hot pan for not more than 2 minutes per side, so that the cabbage is tender yet crunchy.
  • Allow it to cool lightly before shredding into smaller pieces. Combine with the remaining ingredients and serve as a side with pork ribs or sandwiches.

Grilled Cabbage Steak

Cauliflower steaks can move aside to make way for this delicious grilled cabbage steak. Whether you’re a carnivore or not, we promise you’re bound to fall in love with the flavours and textures of this version of grilled cabbage.

Ingredients

  • 1 small cabbage, cut into 2-inch-thick slices
  • Olive oil
  • 3 tablespoons toasted walnuts
  • ¼ cup feta cheese
  • 1 tablespoon lemon juice
  • Chives, for garnish

Method

  • Drizzle some oil on the cabbage slices and grill on a hot pan for about 4-5 minutes, on each side.
  • Transfer to a plate and crumble the feta cheese, toasted walnuts and a drizzle of lemon juice.
  • Garnish with some chopped chives and serve warm with a gravy on the side.
