Spinach Pesto Recipe 

Ingredients:  

  • 2 cups fresh spinach leaves (washed and dried)
  • 1/2 cup toasted pine nuts or walnuts
  • 2 cloves of garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • A squeeze of fresh lemon juice (optional, for brightness)

Method:  

  • In a food processor, combine the fresh spinach, toasted pine nuts, garlic, and grated Parmesan cheese. 
  • Pulse the ingredients a few times to start breaking them down. 
  • With the food processor running, slowly drizzle in the extra-virgin olive oil until the mixture reaches your desired consistency. You may need to scrape down the sides of the processor bowl and blend a bit more. 
  • Season the spinach pesto with salt, pepper, and a squeeze of fresh lemon juice to taste. Adjust the seasoning as needed. 
  • Transfer the spinach pesto to a jar or airtight container. You can use it immediately or store it in the refrigerator for a few days.
