Bihari cuisine is teeming with hearty and flavourful dishes, including Litti Chokha, Dal Pitha, and Sattu Paratha. Looking at these dishes, one may think that the cuisine only boasts highly extravagant dishes. That isn’t the case though; Bihari cuisine also has its fair share of humble dishes. Home chef Shivangi Dubey has attempted to shine a light on the simpler, and perhaps lesser known side of Bihari cuisine in her Instagram post, dated 16th December 2023.

In the video, which is posted on her Instagram handle @cookwithshivangi_, Shivangi remarks that Bihari food is a lot more than simply Litti Chokha. To further emphasize her point, she demonstrates an easy and quick to whip up traditional banana peel chutney. In the lead-up to the recipe, she explains that this chutney can be eaten as an accompaniment with various foods, including chapatti and rice.

As the recipe utilizes banana peels, which people typically tend to throw away, it is an example of zero-waste cooking; in this way, this dish encourages sustainable cooking, making it unique and distinctive. Shivangi begins her cooking process by gathering the chopped skins of boiled raw bananas. Then, in a pan, she introduces spices, including jeera, green chilli, and red chilli, as well as some onions and garlic. She allows this mixture to fry for about a minute. Next, she adds the raw banana skins to the fried mixture as well as some coriander steam.

The ingredients must then be grinded together thoroughly till they form a dense and creamy paste or chutney.
