A pleasant Sunday morning and you are craving some delicious chicken curry with rice. Your confident mind trusts that you can nail the curry and you get to work. Somehow things got messed up and your curry becomes thin, and the consistency is that of a rasam than a curry. You visualize your dreams of having the perfect Sunday lunch sinking in the watery gravy. (sobs) Does this happen frequently with you? Are you the one who goes into the kitchen to call the dibs of the dish but fall by the wayside in an hour after adding more stock than required? If yes, then we have some hacks for you. Here are five ingredients you can add to fix a thin gravy. Check them out and bid adieu to the watery gravy. 

  1. Maida
    Adding maida or refined flour to gravy can give them a thicker consistency. If you have already cooked the dish, you can make a roux by mixing equal parts of fat and maida and add it to the gravy. But if your curry is still underway, you can mix maida in water and add the mixture to the gravy so that the raw taste and smell will get cooked out with time.
  2. Cornflour
    If you are a fan of Desi Chinese, you know how cornstarch plays a vital role in adjusting the consistency of a gravy. You can repeat the same process of mixing cornflour in water and add the slurry to the gravy.
  3. Tomato puree
    Although we wouldn’t recommend this hack for dairy-based gravies, this hack is perfect for curries and spicy Indian gravies. Not only will this puree adjust the consistency but will also add in flavours to complement your dish.
     
  4. Besan
    If you want to go gluten-free, you can add besan to thicken your gravy. You can either add it raw or make a slurry or a roux. Adjust the salt and spices after adding besan to balance the dish.
  5. Egg Yolks
    If you have some eggs in your fridge, do not forget to add the yolks to thicken your gravy. Whisk the egg yolks in a bowl and slowly add a cup or more of the thin gravy while constantly whisking it. Add this mixture to your curry while keeping the heat on low to prevent the yolks from curdling.
