Mascarpone Cheese

Making mascarpone cheese at home is surprisingly easy and requires just two main ingredients: heavy cream and lemon juice or vinegar. Let's see how we can make it at home easily:

Ingredients:

  • 2 cups heavy cream
  • 1 tablespoon of lemon juice or white vinegar

Method:

  • In a heavy-bottomed saucepan, heat the heavy cream over low to medium-low heat, stirring gently and continuously. Heat it until it reaches a temperature of around 180°F (82°C), but don't let it boil. The cream should be hot but not scalding.
  • Remove the cream from the heat and stir in the lemon juice (or vinegar). Continue stirring gently for a minute to ensure the acid is evenly distributed.
  • Cover the saucepan and let the mixture sit at room temperature undisturbed for about 12–24 hours. During this time, the cream will thicken and curdle, forming the mascarpone.
  • After the waiting period, you'll notice the mixture has thickened and has a curdled appearance. Line a fine-mesh sieve or colander with cheesecloth and place it over a clean bowl. Pour the curdled cream mixture into the sieve to separate the curds (mascarpone) from the whey. Let it drain for several hours or overnight in the refrigerator, allowing it to become thicker.
  • Once your mascarpone has reached your desired consistency, transfer it to an airtight container. Store it in the refrigerator, where it will continue to firm up slightly.
