Fugias are soft, fluffy fried balls of goodness that are a traditional East Indian snack, having an ultimate melt in the mouth texture and deliciousness. They are considered so special and heavenly in taste that they are served on usually just every Maharashtrian wedding, festival or an East Indian occasion. They are a must at occasions and no festival seems complete without fugias because they have held a special place in the hearts of many since ages. Fugias are luscious balls, made by first preparing a dough combined with eggs, yeast, coconut milk, rice flour and a lot more flavorful ingredients that are further left to ferment and then fried in oil. Fugias are either relished alongside a flavorful chutney of your choice or dunked in a curry. So without any further ado, let's get into knowing the steps of making them at home.
Ingredients-
- 3 large eggs
- 1 cup coconut milk
- 1kg wheat flour
- ½ cup rice flour
- Pinch of salt
- Sugar as per taste
- 1 tablespoon dry yeast
- Oil for frying ( 1-2 cups)
Steps in the making-
- Take a big bowl and add maida, coconut milk, rice flour, pinch of salt and 2-4 tablespoons of sugar or as per desire.
- In the separate bowl, beat the eggs well and add the yeast too. Whisk everything well. Mix this with the above batter/ mixture.
- Now knead the dough properly using your hands and then leave it overnight, covered with a cellophane sheet to allow the batter to ferment and rise.
- Roll the dough into small balls by greasing your hands with oil first and get them ready for frying.
- Heat a large pan with oil. Slowly and gently pour your balls into the pan and fry them on low-medium flame until they turn brown-golden from both the sides.
- After frying, transfer into a pan covered with plastic tissue to soak the excess oil.
- Fugias are ready. Always serve them hot and enjoy!
