Cookies are some of the most versatile desserts on the planet. They can be soft and chewy or crunchy or even crumbly. A different combination of the same ingredients will yield you a very different cookie.

Besides the texture and taste, cookies also have variable sizes. A cookie with white sugar is likely spread-out during baking than a cookie with brown sugar as an ingredient. Then some cookies are special for different times of the year.

A cookie batter can be rolled or pressed into its desired shape. If a recipe calls for rolling the batter and cutting out the cookie, the batter has come together properly. While a cookie that has spooned and structured by hand has a wetter base.

Chocolate Chip Cookies

An all-time favourite - the chocolate chip cookie never fails to please. This can be prepared soft or crunchy depending on the ingredients. But it’s hard to be bothered by this, it is full of chocolate after all.

Shortbread Cookies

Made from three base ingredients- butter, flour and sugar, this is one of the easiest cookies to whip up. You can basically prepare these in a food processor. This batter will, however, need to be rolled out and because of the butter, it is temperature-sensitive.

Macaron Cookies
A French delicacy, these are much harder to make at home than any of the other cookies. The macaron has a characteristic filling packed between two biscuits which has egg white as a base.

Biscotti Cookies

Great to go with coffee or tea, the biscotti is a delightfully crunchy cookie. The cookie is “twice-baked”, so you can dunk it in your coffee or tea, and it won’t lose its shape.

Gingerbread Cookies

A fun cookie for the holiday season, the gingerbread cookie is absolutely wonderful with just the right notes of various spices.

Sugar Cookies

Another classic holiday favourite is the sugar cookie, they are mostly bland, but you can decorate these with frosting and sugar-glaze.
