How To Make Mexican Lasagna At Home?

Ingredients: 

 1 pound ground beef 

 1 onion, chopped 

 2 cloves garlic, minced 

 1 can (410 gm) diced tomatoes, undrained 

 1 can (425 gm) black beans, rinsed and drained 

 1 can (285 gm) enchilada sauce 

 1 can (115 gm) chopped green chillies 

 1 teaspoon ground cumin 

 1/2 teaspoon chilli powder 

 1/4 teaspoon salt 

 6 flour tortillas (10 inches) 

 2 cups shredded Mexican cheese blend 

Instructions: 

 Preheat the oven to 375°F. 

 In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink. Drain any excess fat. 

 Stir in the diced tomatoes, black beans, enchilada sauce, green chillies, cumin, chilli powder, and salt. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes. 

 Grease a 9x13-inch baking dish. Spread 1/2 cup of the beef mixture on the bottom of the dish. Top with 2 tortillas, overlapping them as needed. Spread 1/3 of the remaining beef mixture over the tortillas, then sprinkle with 1/2 cup of the cheese. Repeat the layers twice, ending with a layer of cheese on top. 

 Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly. 

 Let the lasagna cool for 10 minutes before serving. Garnish with chopped fresh cilantro, if desired.
