If you have a party coming up and you’re looking for a recipe that will shock and awe in equal measure, look no further than these deep-fried Tequila Shots. No, this isn’t a new type of cocktail, it's actually a dessert that’s super simple to make and comes together with just 3 basic ingredients.

With a base of cake – angel food cake is recommended for its light, absorbent texture but any plain sponge will do just as well. With a healthy (or rather not-so-healthy) dose of your favourite tequila and a zing of lime zest you can have a dessert that’s built to share.

Though they can be served up alone, dusted with powdered sugar, a nice addition is a sweet and sour dipping sauce that echoes the notes of lime in the fried treats. So next time you’re looking for a shareable snack or an indulgent platter for your girl's night in, try this tequila-soaked twist to get the party started.

Ingredients:

  • Fried Tequila Shots
  • Vegetable oil
  • ½ cup tequila
  • Juice of 1 lime
  • 1 store-bought angel food cake, cut into cubes
  • ¼ cup powdered sugar
  • 1 tbsp. lime zest

Dipping Sauce

  • Powdered sugar
  • Lime juice
  • Milk

Method:

  • Fill a heavy stockpot with vegetable oil until it is about 13 of the way full. Heat over medium-high heat.
  • Cut your angel food cake into large chunks.
  • In a shallow bowl combine the tequila and lime juice in a shallow bowl.
  • Quickly dip your chunks of angel food cake into the tequila mixture. The cake will soak up the alcohol like a sponge.
  • Carefully lower the cake into the hot oil. When you place your cake into the hot oil, the oil will crackle, sizzle, and spit; again it’s the whole alcohol thing. If you have a mesh net strainer, I would use this to lower your cake into the oil.
  • Allow each cake piece to cook and brown for 1 minute per side. The cake will not take very long to turn golden. After a minute of frying, gently turn your cake over to allow the other side to brown. Remove the cake as soon as both sides are a light golden colour.
  • Remove the cake and immediately allow it to drain on a baking sheet that has been lined with a paper towel.
  • Continue with the rest of the cake pieces. Be careful not to overcrowd the pot and not to allow the cake to cook for too long or else it’ll absorb too much oil and become soggy. Angel food cake will also absorb oil, so be sure to remove the fried cake immediately.
  • Let the tequila cake pieces cool slightly before dusting with powdered sugar.
  • Sprinkle with fresh lime zest.
  • Whisk together powdered sugar, lime juice, and milk for the dipping sauce.
  • Serve fresh fried tequila shots with dipping sauce and enjoy.
