Ingredients:

 ½ cup chocolate chips 

 1 large egg 

 250 g almond butter 

 1 teaspoon vanilla extract 

 100 g of brown sugar 

 1 teaspoon baking soda 

Method: 

 Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Set aside two large baking sheets lined with parchment paper or silicone baking mats. 

 Mix together the almond butter, brown sugar, egg, vanilla extract, and baking soda in a large mixing bowl until well combined. Add the chocolate chips and continue mixing until the chocolate chips are completely combined. 

 Scoop the cookie dough onto the prepared baking sheets using a 1.5-tablespoon biscuit scoop. Make sure to leave some space between each ball of biscuit dough because they will spread while baking. 

 Bake the cookies for 9 to 12 minutes, or until the tops of the cookies are set and firm. Remove the cookies from the oven and cool them completely on the baking sheet.
