Fish Frittata Recipe For When You Crave Breakfast For Dinner

Someone, somewhere asked this very question—we are sure that person was a lazy foodie just like most of us are in the middle of the week—and thus was born the practice of having breakfast for dinner. If you are unfamiliar with the concept then here’s what you should know. If breakfast is the most important meal of the day and breakfast recipes can help you eat like a king or queen with no hassles, then why can’t we have the same dishes for dinner? That’s the underlying logic behind the concept of breakfast for dinner. 

And when it comes to breakfast for dinner, nothing can beat a good frittata. A frittata is an egg-based dish that is similar to an omelette but is definitely more loaded. Packed with veggies, meat, eggs, fish and herbs, this Italian-origin dish can be customized to your tastes and the availability of ingredients—proving that it is just as perfect for weeknights as it is for breakfasts.

One of the most delicious and healthy versions of frittata is the Fish Frittata. You can use leftover fish to make this grand omelette or just cook up and crumble a fillet to make it. Adding vegetables to a Fish Frittata only makes it taste even better and turns it into quite the filling dinner. Here’s the recipe for you to try out tonight. 

Ingredients:

1.5 cups cooked fish fillet, crumbled 

6 eggs 

1 onion, chopped 

1 tomato, chopped 

½ zucchini, chopped 

½ red bell pepper, chopped 

2 garlic cloves, finely chopped 

2 green chillies, chopped 

2 tbsp coriander leaves, chopped 

Salt, to taste 

1 tsp black pepper powder 

2 tbsp milk 

2 tbsp oil 

Method: 

1. Place the fish, onions, tomato, zucchini, bell pepper, garlic and green chillies in a large bowl 

2. Whisk the eggs and milk in a separate bowl, then add to the bowl of fish and veggies. 

3. Mix well, add the salt, black pepper and coriander leaves. Mix well again. 

4. Heat the oil in a cast-iron skillet or oven proof skillet. 

5. Once the oil is hot, pour in the frittata mix and spread everything around evenly. 

6. Let the frittata cook until the sides begin to firm up. 

7. Now, place the skillet in a preheated oven and bake until the frittata top firms up. This should not take more than 10-15 minutes. 

8. Take the skillet out and insert a skewer to check if the frittata is cooked through and through. 

9. Alternatively, if you don’t have an oven, you can continue to cook the frittata on a stove top on low heat by covering the skillet with a lid. Cook the frittata until the top firms up then perform the same skewer test. 

10. Let the frittata cool down a bit, then serve it with some bread, chutney and dip.
