Any foodie who visits Kolkata knows that heading off to Park Street for a visit to the city’s most iconic eateries should be at the top of their to-do list. Now, foodies in Kolkata can walk down Park Street, take a turn into the lane next to Flury’s and cross Peter Cat to visit the city’s most prominent authentic Italian restaurant, Fabbrica Originale. For an area which is known for its old buildings and beautiful restaurant facades, the new Fabbrica outlet offers an incredible breath of fresh air with its glass front facade with gives you a view of a massive wood-fired pizza oven whipping out authentic Neapolitan breads and more.
To be fair, the Fabbrica Originale brand is not new to the city. Established in 2017 by three friends with a deep passion for authentic Italian food, Fabbrica had two very popular outlets at Allenby Road and City Centre. While the Allenby Road branch is now closed for renovations—and will get back to feeding Kolkata’s Italian food lovers in its new avatar soon—the Park Street Fabbrica Originale is now their flagship restaurant. The new outlet spans across two floors, is 3000 sq ft decked with vintage chic interiors and accommodates 94 guests.
So, while Fabbrica started in Kolkata as a humble pizzeria, with its flagship outlet in Park Street the brand is now embarking on a whole new phase of its evolution. The restaurant not only offers incredible signature dishes served in the most authentic ways, but with its knowledgeable and dedicated serving and kitchen staff, it also offers an exceptional dining experience.
Slurrp caught up with Naman Dhandhania, Creative Director at Fabbrica—one of the three friends behind the restaurant—to find out more. Here’s everything you need to know.
Why Park Street For Fabbrica Originale’s Flagship Outlet
The Fabbrica journey began in 2017, with three passionate college graduates—Naman, Raghav, and Rohan—embarking on a shared dream. “We were right out of college and wanted to do something in the F&B space since we shared a common love and passion for food,” Naman recalls. Today, Fabbrica stands as a testament to their vision and hard work—a vision that is personified at the Park Street outlet better than ever before.
Known for its vibrant food culture, Park Street might seem like a natural choice as mentioned before, but for Fabbrica, the decision was deeply strategic. “We wanted to get a space which could allow us to truly express ourselves with how we wanted to place and position Fabbrica,” says Naman. “The space has allowed us to curate an extensive bar along with the layout that’s truly suited to the format we were aspiring to build, with Fabbrica.” The flagship venue is therefore more than just a restaurant; it’s a testament to the brand’s evolution and ambitions.
But this is not just a new outlet for Fabbrica—it is also a much bigger one. Operating across two expansive floors with increased seating capacity, the flagship outlet comes with its own challenges. “With more covers and two floors, we definitely needed more service personnel to achieve operational efficiency,” Naman shares. “The elevated format also demands a style of service that is more hands-on.” True to his word, the service staff at Fabbrica really does play a huge role in the customer experience.
For example, this author was served by Gordon Xavier, who has been at Fabbrica for years and has just shifted focus to the Park Street outlet from the Allenby Road branch. Xavier was not only able to talk about the ingredients used to create the dishes but also guided diners through the entire menu, the specials, and how to combine simple ingredients like roasted garlic and olive oil to elevate the flavour of a focaccia bread! This focus on refined service complements the elevated dining experience Fabbrica seeks to offer.
A Menu to Savour: Fabbrica’s Authentic Italian Dishes
Food enthusiasts can look forward to both familiar favourites and enticing new offerings at Fabbrica Originale’s Park Street outlet. “The food menu has Fabbrica classics along with many new additions, including regional focaccia, pasta, and artisanal Gelato,” Naman reveals. However, the pièce de résistance lies in the beverage section. “We’re most excited for our aperitif-forward cocktail menu, which we’ve spent months curating and can’t wait to showcase,” he adds.
For first-time visitors, Naman recommends starting with the Margherita, the truffle pasta, and the signature tiramisu—each a testament to Fabbrica’s culinary philosophy. This author would further recommend the Supli Cacio E Pepe as well as their Contadina pizza (perfect for meat lovers!). Those with a mild sweet tooth should also give their Panna Cotta and Affogato a try.
Fabbrica’s approach to Italian cuisine has already left an indelible mark on Kolkata’s food landscape. “The style of Italian food we do and have always believed in is home-style Italian food made using the best of ingredients available, sourced both locally and from Italy,” Naman explains. “Unfussy, simple, and honest. This has always been the crux of what we do at Fabbrica, and I believe this is what sets us apart in the city.”
Looking Ahead
Naman also revealed that Fabbrica’s aspirations extend far beyond Kolkata. “We definitely want to get to other Tier 1 cities in the next couple of years,” says Naman. Closer on the horizon is a new space in Goa and the launch of an exciting sub-brand catering to a different category.
With its flagship outlet in Park Street, Fabbrica is set to redefine Italian dining in Kolkata, promising an experience that is both authentic and memorable. As Naman and his team look towards the future, the city eagerly awaits the next chapter in Fabbrica’s story.
