Ever Made Revri At Home? Chef Kunal Kapur Shares Recipe

Winter is slowly arriving in India. With the cold weather already wrapping the northern region, we can’t help but think of all the winter special foods we’ll finally be able to nosh on. After all, it is the season of gajar ka halwa, sarson da saag, gajak and so much more. Just thinking about all these delectable desi treats, we are slurping. As soon as the season changes, our kitchen items, just like our wardrobe, changes too. While during summers, our diet revolves around light and cooling foods, including citrus fruits and curd in all forms, come winter and it is all about soups and warm foods including jaggery, sesame, and more.  

Sesame (til) is one ingredient that is eaten in abundance during the cold weather. Why? Sesame seeds are known to be naturally warming, and that's what we really want to brave the chilly days. Certain foods have the potential to keep us warm by just eating them, and sesame seeds are one of them. And do you know what is one of the most popular snacks made with sesame? Revri.  

Til revri isn’t just a winter-staple but also a festive-special snack during Lohri and Makar Sankranti. The brittle-sweet snack is made by combining the goodness of til along with jaggery. People not only munch on these tiny treats during Lohri, but they also throw a few towards the bonfire. While you can get revri on every sweet shop and street-side stalls during the season in abundance, did you know you can make it at home quickly and easily? The celebrity chef keeps sharing quick and easy recipes, tips and tricks and many more kitchen hacks on his social media, and now that winter is coming, he shared a simple recipe video of revri on his Instagram. “Winters are coming and you can smell revri in the air”, he wrote in the video. Here’s the full recipe. 

Ingredients: 

  • 1 cup sesame 
  • 1 ¼ cups jaggery (crushed) 
  • Water 
  • 1 tbsp black cardamom seeds  
  • ½ tsp cardamom powder 
  • ½ tsp baking soda  
  • 1 tbsp ghee 

Method:

  • Heat a pan and add sesame. Dry roast it for 3-4 minutes.  
  • Remove and keep aside to cool completely. 
  • In a fresh pan, add jaggery and water, bring to a boil. 
  • Now, strain it into a fresh pan and bring to a boil again until it froths. 
  • Add a tbsp of ghee to get a shine on the final revdi. 
  • Boil until the jaggery reaches a hard crack stage.  
  • Now, add cardamom powder and baking soda, mix and add sesame (keep aside a handful of the sesame). 
  • Turn off the heat and remove the pan from the stove.  
  • Keep stirring the mixture to slightly cool it. 
  • Once it is a bit cool but still quite warm to touch and pliable, break off a small piece and roll it into a round. 
  • Dip in sesame and flatten it. Repeat with the remaining mixture. 
  • Once cool, it will be crunchy and ready to serve.
