Growing up in a Bengali home, I have never quite understood the hatred against brinjal. Begun Bhaja or eggplant fritters are a lunchtime staple, perfectly seasoned and sliced eggplants tossed in hot oil, served with steaming hot rice and dal, will forever be a combination of comfort and nostalgia for me. Many say that brinjals are, in fact, native to India, there are several interesting legends associated with this purple veggie. Back in the day nomads and hunter-gatherers, especially in the North-Western frontier relied on animal meat that they would hunt, and later cook in underground ovens; one of the few veggies that would make it to their meals was brinjal and that’s because it could grow so easily in the wild. One could pluck and cook it, without much effort. Brinjals or eggplants have been an intrinsic part of Indian cuisine since time immemorial. Contrary to popular belief, it is actually a fairly versatile veggie. Ingredients:
-Eggplant - 2
-All purpose flour - 1/3rd Cup
-Salt - 1/4th tsp
-Pepper - 1/4th tsp
-Bread Crumbs
-Coriander powder - 1/4th tsp
-Salt - 1/4th tsp
-Egg - 1
Method
-Slice the Eggplant and keep aside. Take a bowl and add all purpose flour, salt and a pepper and mix well.
-Take Bread Crumbs, add salt and coriander and mix well.
-In another bowl, whisk an egg and set aside.
-Dip the eggplant pieces in the flour, then the egg and coat well with bread crumbs.
-Deep fry on medium heat till Golden brown.
Serve while it’s hot and crispy with a sauce of your choice. Tastes perfect with a Garlic Dip or Mayonnaise.
