Sweet and tangy, Egg Noodles is a delightful recipe to have during lunchtime to make your day. The recipe is prepared with veggies, egg, chicken and noodles and is highly customizable. You can prepare it by adding whatever vegetables you have in hand. It can be served cold or hot and dry or saucy as per your choice.
The dish can also be prepared soupy by adding some amount of boiling water to it. It is quick to prepare and a healthy recipe which is filling as well. These noodles are loved by kids and can be served with some gravy or sauce to make the most of it
Here’s the recipe for Egg Noodles.

Ingredients:
• 1 pack of regular noodles
• 5-6 cups water
• ½ cup oil
• A handful of curry leaves
• 1 large onion (sliced)
• ½ red pepper (chopped)
• ½ tsp turmeric powder
• 1 chicken
• ½ tsp soy sauce
• ½ tsp vinegar
• ½ honey
• ½ chilli flakes
• 1 egg
• Salt, to taste
Method:
• In the first step, put a small pan of boiling water over a medium flame.
• Add the dried noodles and boil them for approximately 4 minutes.
• Once boiled, transfer them to a bowl of cold water. Leave them aside for a while.
• Now, take a bowl and mix all the sauce ingredients in it.
• Once combined, put this sauce into a small well-sealed container.
• Ensure that the counter doesn’t leak out otherwise it will ruin the whole lunch meal.
• Next, heat some oil in a frying pan over a medium-high flame.
• Break the egg into a cup and whisk it for a few seconds.
• Now, pour this batter into the pan and fry to get a thin omelette.
• Once the omelette is cooked from one side, flip it to cook from the other side.
• Then, transfer the cooked omelette to a chopping board and leave it for a while at room temperature to cool down.
• Now, place the same pan over a high flame and include the chicken.
• Fry for 1 minute from each side.
• Once cooked, switch off the flame and put it on a piece of paper towel to cool down.
• In this step, roll the omelette to form a cylinder shape, then slice it into small pieces.
• Now, drain the cooked noodles properly and put them into your lunch box.
• Top the noodles with bean sprouts followed by the rashers, egg, pepper, and tomato.
• Finally, sprinkle spring onion sesame seeds and chilli flakes on the dish.
Notes:
• Don’t over-cook the noodles otherwise, they will get soggy quickly.
• The noodles can be served cold as well as hot, as per your choice.
• You can make it spicier by adding a good amount of chilli flakes.
• You can ignore adding soy sauce, as per your choice.
