Ingredients:

  • 4 eggs
  • Salt and pepper
  • For coating - batter
  • ¼ cup all-purpose flour
  • ¼ cup corn starch/ cornflour
  • ½ tsp Chilli powder

For Manchurian

  • Oil
  • 1 tbsp ginger (finely chopped)
  • 1 tbsp garlic (finely chopped)
  • 2-3 green chilies (finely chopped)
  • 1 onion (finely chopped)
  • 1 capsicum (finely chopped)
  • 2 tbsp chili sauce
  • 2 tbsp tomato sauce
  • 1 tsp soya sauce
  • 1 tsp vinegar
  • ½ tsp pepper powder
  • Salt and pepper (as per taste)
  • 3-4 strands of spring onion

For gravy

  • 1 tbsp cornflour + water

Method:

  1. Step one is steaming the eggs, breaking the eggs into a bowl, and adding the required salt & pepper. Mix well, grease a pan with some oil, transfer them into a flat plate/ tray, and keep it inside a steamer or idli cooker. Steam them for 15-20 minutes.
  2. Once they are steamed, cut them into small pieces in the desired shape—time to fry these eggs.
  3. In a bowl, mix all-purpose corn flour, chili powder, and stir well with water. Convert into a semi-thick consistency. Coat the eggs and deep fry in hot oil. Once they become crispy, take them out and keep them aside.
  4. Time to make the gravy; now, in the same or another pan, heat the oil, add finely chopped ginger, garlic, green chili, and saute them for a minute until they turn light golden. Add chopped onions, capsicum and saute them until they turn translucent. Cook the veggies for 3-6 minutes.
  5. Now it's time to add sauces in the veggies, add chili sauce, tomato sauce, soya sauce, vinegar, and mix them well. Add black pepper and salt. Simmer them for 2-3 minutes.
  6. Add fried eggs, give a gentle stir, now in a small bowl, dissolve cornstarch and water and add into it.
  7. Check the consistency according to your requirement.
  8. Mix the sauces; once it starts thickens up, add chopped green spring onions.

Your egg Manchurian is ready; garnish it with sesame seeds and spring onions. Served with fried rice or noodles.
