Dussehra 2024: Chef Agnibh Mudi Shares Festive Recipes

As India gears up to celebrate good over evil on Dussehra this year, falling on 12th October, it is only natural to explore new recipes to make the most of the vibrant Hindu festival. Marking the defeat of Ravana by Lord Rama, you must have already made traditional recipes like kheer, seviya, laddu, barfi, and so on.

Jalebi Chaat

Ingredients:

  • 50 grams sweet curd
  • 10 grams fried jalebi
  • 50 grams iImli chutney
  • 50 grams green chutney
  • 15 grams sev
  • 15 grams onion (finely chopped)
  • 15 grams tomato (finely chopped)
  • 1 gram chaat masala
  • 5 grams pomegranate
  • 2 grams coriander (chopped)
  • Sev for garnish

For Jalebi Batter:

  • 1000 grams maida
  • 5 grams yeast
  • 100 grams curd
  • 2 grams baking powder
  • 800 ml water

Instructions:

  1. Mix maida, yeast, curd, baking powder, and water in a bowl to form a smooth batter. Let it rest for some time to activate the yeast.
  2. Heat oil in a deep pan. Using a squeezy bottle, pipe the batter into the hot oil in circular shapes to form jalebis. Fry until crispy and golden. Set aside.
  3. On a serving plate, layer the fried jalebis. Drizzle generously with imli chutney, sweet curd, and green chutney. Sprinkle chopped onions, tomatoes, sev, and chaat masala over the top.
  4. Finish with a handful of pomegranate seeds, chopped coriander, and extra sev for that crunchy texture.
  5. Serve immediately and enjoy the delightful balance of sweet, tangy, and spicy flavours in this unique Jalebi Chaat!

Makhana Aloo Tikki

Ingredients:

  • 4-5 potatoes, boiled
  • 25 grams makhana roasted, ground
  • 5 grams green chillies, finely chopped
  • 2 grams fennel seeds crushed
  • 15 grams roasted peanuts, crushed
  • 3 grams coriander leaves, finely chopped
  • 1 gram chaat masala
  • 1 gram garam masala
  • 2 grams red chilli powder
  • 2 grams black salt
  • Crushed black pepper to taste
  • Oil for shallow frying

Instructions:

  1. In a large bowl, mix together the boiled and mashed potatoes, roasted and ground makhana, finely chopped green chillies, crushed fennel seeds, roasted peanuts, and coriander leaves.
  2. Season the mixture with chaat masala, garam masala, red chilli powder, black salt, and crushed black pepper.
  3. Shape the mixture into tikkis, forming them into your desired size and shape.
  4. Allow the tikkis to rest for a while.
  5. Heat oil in a pan and shallow fry the tikkis until they are golden brown and crispy on both sides.
  6. Garnish with a sprinkle of chaat masala and chopped coriander.
  7. Enjoy the delightful crunch of Makhana Aloo Tikki with its perfect blend of textures and flavours, paired best with a mint chutney!
