Durga Puja: Chef Ram Bahadur Budhathoki Shares Snack Recipes

The Durga Puja celebration in West Bengal cannot be summarised in words. Communities gather to establish larger-than-like pandals, prepare thousands of delicacies, participate in rituals, and enjoy the traditional dhunuchi. It is the biggest festival for the Bengali community, and it is celebrated with the same enthusiasm across India.

Since the festivities are incomplete without food, Slurrp brings you easy-to-follow recipes for lip-smacking snacks by Chef Ram Bahadur Budhathoki, Head Chef, Chowman Chain of Restaurants (Kolkata’s famous Chinese restaurants chain).

Kolkata Style Chilli Chicken

Ingredients

  • 250 of grams chicken
  • 30 of grams of cornflour
  • 10 of grams maida
  • 2 eggs
  • 70 ml refined oil
  • 15 grams of green chillies
  • 10 ml ketchup
  • 3 grams of sugar
  • 15 ml dark soya
  • 5 ml light soya
  • 5 grams of spring onion

Method

  • Take the chicken pieces and thoroughly clean them under cold water, then marinate them using cornflour, maida and eggs. 
  • Heat a pan and add some refined oil to it. Once heated, add the marinated chicken pieces to the pan and fry them a little. 
  • In the same pan, add more oil if necessary and green chillies. 
  • Now add dark and light soya sauces, tomato ketchup, salt, black pepper, a little bit of sugar, and broth powder. 
  • Drop the fried chicken pieces into this sauce and cook them so that they absorb the flavours. 
  • Once done, place them on a plate and garnish using spring onion and freshly chopped green chillies! Your Kolkata-style chilli chicken is ready to be savoured! 

Fried Chicken Wings

Ingredients

  • 300 of grams whole chicken wings
  • 6 grams of ginger
  • 5 grams of garlic
  • 10 ml chilli oil
  • 2 grams of coriander leaves
  • 1.5 tablespoons lemon juice

Method

  • Clean the pieces of whole wings thoroughly with tap water.
  • Now mix a few drops of chilli oil into any batter of your choice.
  • Add ginger and garlic paste to the batter 
  • Cover the pieces of whole wings with the normal batter.
  • Marinate wings for at least 15 minutes 
  • Deep fry the pieces in vegetable oil until they turn crispy and yellow. 
  • Squeeze a few drops of lemon on top for sourness.
