Can You Leave The Batter Overnight?  

It is usually said that the leftover batter should be used as soon as possible. However, you can leave it overnight, considering it is stored properly. Most cake batters contain dairy products, which can go bad and lead to the growth of bacteria. So even if you end up storing it overnight, make sure to store it in the refrigerator. Try to reuse the cake batter first thing in the morning to prevent spoilage. 

Can You Store Cake Batter With Raw Eggs In It?   

Yes, you can. There is no problem with storing the cake with eggs in it. But the leftover batter must be used within less time, or at least can be kept overnight. Remember to store the batter in the refrigerator.   

How To Tell If The Cake Has Gone Bad?  

Although you can store the cake for a few months, there is always a chance that the batter can get spoiled. To ensure it is fresh and can be used for baking, watch out for any unpleasant odour or any colour change. If any of the signs are visible, you need to discard them immediately.

  • Allow The Batter To Cool Down  

Generally, the cake batter is cold. However, there are times when we add hot ingredients to it, such as melted butter or chocolate. Prior to storing the cake batter, always make sure to cool it. Storing a hot batter may result in early spoilage, as a warmer environment encourages the growth of bacteria. It may even curdle or affect its texture. Cool the batter before you decide to store it. 

  • Always Store In Airtight Container   

Just like most leftover food, leftover cake batter can be stored in airtight containers. This prevents it from drying out and ensures that it can be used later on. If you feel the batter is too much for a single container to hold, divide and keep it separately in two containers. Besides, you can use a zip-lock bag, but storing leftover cake batter this way can make it messy.   

  • Refrigerate It  

Leftover cake batter should never be stored at room temperature. You should always store it in an airtight container in the refrigerator. This won’t allow the cake to go bad. Its flavour and texture will remain intact. If you think that the batter has thickened a bit, you can bring it to room temperature just before use. 

  • Freeze It  

Often, due to certain circumstances, we might not be able to use the leftover cake batter immediately. In that case, opt for the freezer. Obviously, it is not possible to store it for weeks or months, but you can store it for up to 2–3 days. Just transfer the cool batter to an airtight container and freeze it like any other item. Before using it, thaw it in the refrigerator or leave it at room temperature.
