The ‘doi’ is referred yoghurt, and ‘chire’ in Bengali means flattened rice or chiwda. How To Make Bengali Style Doi Chire?
Ingredients for sweet yoghurt:
- 1 cup flattened rice (poha/chivda)
- 1.5-2 cups of sweet thick yoghurt
How to get sweet yoghurt?
Boil 2 cups of milk with less water, keep aside to cool. Add two tablespoons of dahi (curd) and add one tablespoon of sugar. Give a good stir and keep curd for curdling overnight. Once it is done, take a muslin cloth to extract the water, and you’ll get thick sweet yoghurt.
Ingredients:
- 1 banana sliced
- Any other fruit of your choice
- Nuts and raisins (chopped)
- Sugar/ Coconut sugar/ Honey as per taste
Procedure:
- Clean the flattened rice (poha) in the running water and rinse the water thoroughly with the help of a sieve.
- In the bowl, mix sugar/coconut sugar/honey/. In this process, traditionally, sugar drop candies are used. Bengalis call them ‘bastasha’. Add if you have some; it gives you a crunchy texture.
- Now add yoghurt to the same bowl and give a good mix. You can avoid adding extra sugar if you are using mishti doi for this recipe.
- Add sliced banana, nuts and raisins; give a final mix to this.
- Transfer this to the serving bowl, garnish with some fruits of your choice. Prefer these fruits to taste good such as pomegranate, mango, and grape, in this recipe.
