The summer season is here in full swing and along with the scorching heat, it also brings with it the ways to tackle it all- seasonal fruits! Watermelon is one of the most popular summer fruits in India and is eaten in myriad ways besides being enjoyed in a fruit bowl! From smoothies, juices, popsicles to salads and mojitos, think watermelon and all we can think of are these refreshing ways to put them to use. We absolutely love them, no doubt. But what about all the watermelon rinds that go into the dustbin after all this? Did you know watermelon rinds can be used in multiple ways, and much like the flesh of the fruit, are replete with a dozen health benefits. 

As per various studies, watermelon rind is rich in amino acids that promotes blood circulation and also promotes heart health. And if you are thinking how to include the rind in your diet, we’ve got three excellent ways to do so! 

1. Pickle 

Watermelon pickle is one of the simplest ways to use watermelon rinds. All you need to do is boil the rinds with salt until tender, strain and put in a jar. Simultaneously, reserve the boiled water, combine with peppercorns, sugar, apple cider vinegar and spices of your choice. Pour this with rinds and store for a week! 

2. Stir-Fry 

Quick, easy and absolutely delicious! All you need to do is sautee watermelon rinds with carrots, beans or your choice of such veggies and mix-in with soya sauce, garlic, honey and ginger. Throw in mint, cilantro, chives and more for flavour.  

3. Tarbooz Ki Sabzi 

Give it an Indian spin by chopping the rind into cubes, boiling and tossing them in a gravy packed with Indian spices such as garam masala, kasuri methi, asafoetida along with tomatoes, ginger, coriander powder, mango powder, salt and red chilli powder!
