Diwali 2024: Chef Roopa Nabar Shares Sweet And Savoury Recipes

Khichuri

Ingredients

  • 1 cup basmati rice
  • 1 cup moong dal 
  • ½ cup diced carrot 
  • ½ cup cauliflower florets 
  • ½ cup French beans roughly chopped 
  • ½ cup peas 
  • ½ cup cabbage roughly chopped 
  • 1 potato peeled and diced 
  • 1 tomato roughly chopped 
  • 1 tsp grated ginger 
  • 2 green chillies roughly chopped 
  • 1-inch cinnamon 
  • 2 green cardamom 
  • 2 cloves 
  • 1 bay leaf 
  • 1 tsp cumin seeds 
  • ½ tsp turmeric powder 
  • 1 tsp chilli powder 
  • 3 tbsp ghee 
  • 6 cups water 
  • Salt to taste 

Method

  • Wash and soak basmati rice for 30 minutes 
  • Dry roast moong dal for 2 minutes 
  • Pour ghee into a pressure cooker. Add cumin seeds, cloves, cardamom, cinnamon, bay leaf, ginger, green chillies, turmeric, and tomatoes, and mix well.
  • Add soaked and drained rice and roasted moong dal. Sauté for a minute. 
  • Add all chopped vegetables and potatoes. Toss them. 
  • Add chilli powder and salt. After sauteing for a minute, pour 6 cups of boiling water. 
  • Close the cooker lid. After 1 whistle on high flame/heat, let the ingredients simmer, and cook for a further 8-10 minutes. 
  • Put off the heat. Open the lid after the pressure drops. Mix and serve.

Sweet Corn Sundal

Ingredients

  • 3 cups boiled sweet corn niblets
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • ½ tsp hing
  • 3 red dried chillies broken
  • Sprig of curry leaf
  • ¾ cup fresh grated coconut
  • 2 tbsp oil
  • Salt to taste

Method

  • Add oil in a kadhai and drop in mustard seeds, urad dal, curry leaves, red chillies, and hing. Let the ingredients sizzle. 
  • Add sweet corn to it and toss them well. 
  • Sprinkle salt and cook the ingredients for a minute.
  • Add grated coconut, mix, and serve.

Coconut Barfi

Ingredients

  • ¾ cup milk
  • 1 cup milk powder
  • ½ cup desiccated coconut
  • ½ cup fresh grated coconut
  • ¼ cup ghee
  • ¼ cup sugar
  • ½ tsp cardamom powder
  • 1 tbsp chopped pistachio/almonds

Method

  • Use a heavy-bottom kadhai or pan to boil milk.
  • Add ghee and sugar to the milk. Let the sugar dissolve. 
  • Add milk powder and stir continuously on low heat for 5 minutes until the concoction starts thickening. 
  • Fold in desiccated and fresh coconut. Mix vigorously till it forms a thick mass. 
  • Grease a plate with ghee to prevent the mixture from sticking.
  • After spreading the barfi mix, flatten it gently using a spatula.
  • Garnish coconut barfi with chopped pistachios/almonds. 
  • Let it settle for half an hour.
  • Cut the barfi mixture into desired shape and serve.
