Its bursting flavours are the reason Haryanvis can't resist it. You do not require a month to prepare this achaar by exposing it to sunlight. Teent Ka Achaar
To make this pickle, you need:
- Teent: 200 grams
- Mustard oil: ½ cup
- Chilli powder: 1 tsp
- Ajwain powder: 1 tsp
- Fennel powder: ½ tsp
- Turmeric: ½ tsp
- Asafoetida and salt: ½ tsp
Preparation:
- Remove the stem of the nicely washed teent.
- Expose them to sunlight for a few hours and then apply salt on them.
- Keep the teent in a jar for a day.
- Take a pan. Add oil and let it heat for a few seconds. Now, add the ingredients like turmeric, ajwain powder, asafoetida, fennel powder, and chilli powder. Mix them well and saute for 1 minute.
- Now, add the salted teent to it and saute for a few minutes. Now transfer the mixture to a different utensil and let it cool down.
- Once done, put them in an airtight jar and expose the jar to the sunlight for 2 days.
