Summers and snacks are closely related to each other. Especially in North India, people like to prepare different kinds of snacks and love to have them with tea and coffee. Apart from this, the demand for various snack recipes is pretty high at my place during weekends as everyone is at home. That said, there's also the possibility of getting bored trying the same snack every day. Fret not. Here’re a few snack recipes from Uttar Pradesh that you will love. You can also make them on special occasions, as the preparation does not take much time and effort.
Tokri Chaat
Ingredients:
- Tomato - 1/2 finely chopped
- Tamarind chutney - 1/2 tsp
- Red chilli powder - 1/2 tsp
- Boiled chickpeas - 1/2 cup
- Cumin powder - 1/2 spoon
- Onion - 1 finely chopped
- All-purpose flour - 2 cups
- Amchur powder - 1/2 tsp
- Salt - according to taste
- Chaat masala - 1/2 tsp
- Green chutney - 1 tsp
- Boiled potatoes - 1
Method:
- First, add a little salt, oil and water to the flour and knead it well.
- Now, roll the mixture in the shape of a puri. Put it in a glass/bowl, and bring it into the form of a basket.
- Heat oil and deep fry the puris in a pan.
- Mix the other ingredients well and fill them well in the basket.
- After filling, serve by pouring chaat masala and tamarind chutney on top.
Moradabadi Dal Chaat
Ingredients:
- Red chilli powder - 1/2 tsp
- Yellow moong dal - 1 cup
- Coriander leaves - 2 tsp
- Cumin powder - 1/2 tsp
- Chaat masala - 1/2 tsp
- Lemon Juice - 1/3 tsp
- Green chutney - 1 tsp
- Asafoetida - 1 pinch
- Black salt - 1/2 tsp
- Cream - 2 tsp
Method:
- Soak moong dal in water the day before.
- The next day, put the moong dal, salt, asafetida and water in a pressure cooker and let it remain for one whistle.
- After the lentils cool down, take them out in a vessel.
- Put the cream in a pan, and fry the lentils for some time.
- After roasting, put salt, chaat masala, asafoetida, coriander leaves and lemon juice; serve it in a vessel.
Galouti Kebab
Ingredients:
- Ginger-garlic paste - 1 teaspoon
- Red chilli powder - 1 teaspoon
- Mutton mince - 300 grams
- Papaya pulp - 30 grams
- Gram lentils - 20 grams
- Butter - 3 teaspoons
- Mace - 1/2 teaspoon
- Salt - as per taste
- Cardamom - 2
Method:
- Put the chana dal in a pan and roast it well.
- After it cools down, put it in the mixer and grind it well.
- Then, take out the chana dal on a plate, add mutton mince and mix well.
- Add the other ingredients to this mixture, mix well and keep it aside for about 10 minutes.
- Make a kebab out of the mixture; heat the butter in a pan and fry it until it becomes golden.
