Croissants: The Delicate French Pastry With an Eggless Twist

Croissants, with their buttery layers and delicate flakiness, have captured the hearts and taste buds of people worldwide. Originating in France, this pastry has become a symbol of fine French baking craftsmanship. The word "croissant" itself means "crescent" in French, reflecting its iconic crescent moon shape.

Legend has it that the croissant was created in the 17th century in Vienna, Austria, during the Ottoman Empire's siege. The Viennese bakers noticed the crescent banners of the Ottoman soldiers, inspiring them to create a pastry in that shape. The recipe was further refined in France, where butter was added to create the luscious layers that croissants are known for today.

Making traditional croissants can be an intricate process, involving multiple layers of buttery dough that are folded and rolled several times to create the characteristic flakiness. However, for those following an eggless diet or seeking a plant-based option, an eggless croissant recipe offers a delectable alternative.

Let it sit for a few minutes to thicken. In a large mixing bowl, combine flour and salt. Add the vegan butter in small pieces and use your fingers to rub it into the flour until the mixture resembles breadcrumbs. Add the flax "egg" and yeast mixture to the flour mixture. Mix until the dough comes together. Turn the dough onto a lightly floured surface and knead for a few minutes until smooth. Roll out the dough into a rectangle and fold it into thirds like a letter. Repeat this process two more times, chilling the dough in between folds. Roll out the dough one final time into a large rectangle. Cut triangles from the dough. Starting from the wider end, roll each triangle towards the tip to form the croissant shape. Place the croissants on a baking sheet lined with parchment paper.
