Craving Something Sweet? Try This Japanese Rice Cake Ice Cream

Millions of the BTS Army were blown away by awe and curiosity at BTS’s Jimin being named ‘Mochi’ by some South-East Asian fans for his cuteness. Since then, fans have flooded the search engines by searching the Japanese delicacy ‘Mochi Ice Cream’ recipe. Mochi is basically a glutinous rice ball stuffed with ice cream of your choice and covered in either a savoury or sweet coating. Traditionally, it’s a must-have during the Japanese New Year, devoured with a red bean soup. Although extremely scrumptious, making Mochi can be laborious as it is super sticky. However, this shouldn’t stop you from enjoying these smooth, glutinous and sweet delights. Here’s the recipe if you want to try it.

INGREDIENTS

 2 cups glutinous short-grain rice (Mochiko)

 ¾ cup sugar

 Ice cream of your choice

 Cornflour for rolling out the rice cakes

 Sugar powder for coating them

 Food colouring

METHOD

1. Scoop out portions of ice cream into parchment paper and keep them in a freezer. 

2. Combine the Mochiko, sugar, and water and microwave the mixture for one minute.

3. Take the container out and whisk the mixture to get rid of lumps, if any. Pop the container back into the microwave for a minute.

4. Take the container out and stir the rice mixture using a spatula dipped in water for the last time. Combine the food colour and microwave for 30 seconds.

5. Scrape the dough out of the container into a parchment paper covered with a generous amount of corn starch. 

6. Roll out the dough into a rectangular shape and dust it properly with cornstarch to prevent it from sticking. 

7. Pop the rolled-out dough into the refrigerator for 30 minutes and allow it to cool. 

8. Take the cooled-down dough and cut circles using a cookie cutter. 

9. Take one scoop of ice cream and place it in the middle of the Mochi dough and squeeze the edges to seal around the ice cream, forming a ball.

10. Wrap the Mochi ice cream in cling wrap to preserve the shape and refrigerate for two hours. 

11. Before serving, dust the Mochi ice cream with sugar powder to enhance its taste.

You should refrigerate all the elements properly for the advised amount of time to avoid the mess. Eat this Mochi ice cream post-dinner or the Japanese way with red bean soup.
