Of course you could buy a cake and you could most definitely push a few things around your schedule to accommodate making one instead but all the effort doesn’t have to be starting with you, for once.
Buying a few things from the grocery store and giving them a second life is just as much you as would baking and frosting something for Christmas. With a handful of ingredients, you can still come up with something that has a homemade feel to it but hardly takes any time to put together. Most of all, it saves you from having a meltdown during such a happy time of the year. These mini chocolate yule logs are not just cute to look at and delicious to eat, it also captures the spirit of the festivities by staying on theme and bringing a sweet ending to a rather scrumptious and nap-inducing meal. There is no shame in using a few pre-made elements and simply assembling them at home. After all, it’s the thought that counts! To make 10-12 mini chocolate logs, you will need:
Ingredients:
- Store-bought Swiss cake rolls (preferably chocolate or vanilla)
- 1 huge bar dark chocolate
- 2 tablespoons butter
- ¼ cup cream
- Rainbow sprinkles
- Gingerbread cookies
- Edible glitter

Method:
- In a double boiler (a bowl suspended over a saucepan of simmering water), break the bar of chocolate into smaller pieces. Add the butter and cream and allow everything to melt into a glossy pool of chocolate.
- Since store-bought Swiss rolls are anywhere between 4-5 inches in size, cut them into two or three pieces, depending on how big you’d like for the mini logs to be. Using a fork, dip each piece into the melted chocolate and rest them on a wire rack for the excess chocolate to drip over. Garnish with sprinkles or crushed gingerbread cookies while the chocolate is still glossy. Allow them to set for an hour or so and sprinkle some edible glitter on them before serving.
