Hello chicken lovers! We are back with the recipe of pyaaza chicken to build up the bond between us. Chicken Do Pyaaza is remarkably discovered with irresistible flavors of onion, meat, and spices. Originally this recipe was inspired by Mughal and Persian cuisines, and later it went throughout the Indian menus. The marinated chicken pieces cooked with yogurt and kasoori methi bring out this creamy gravy's aromatic flavors. So, set your timers for this spicy, juicy, masala-loaded recipe for you. 

Ingredients you need for chicken do pyaaza

For marination:

  • 1 kg chicken 
  • 2 onions 
  • 4 tbsp ginger-garlic paste
  • 1 tbsp red chili powder
  • 2 tbsp desi ghee
  • 2 tomatoes 
  • 1 cup hung curd (small)
  • 1 tbsp turmeric
  • 1 tbsp coriander powder 
  • 1 tsp cumin powder 

For garnishing:

  • 4 tbsp Amul cream 
  • 1 tbsp fresh coriander leaves
  • 1 tbsp mint leaves
  • 1 tbsp karoosi methi 
  • 1 tbsp green chilies (finely, chopped)
  • Salt

For garam masala:

  • 4-6 green cardamom powder
  • 2 mace / nutmeg 
  • 6-7 cloves
  • 1-inch cinnamon stick 
  • 2 black cardamom 

How to make Chicken Do Pyaza?

  • First, you need to dry roast the garam masala ingredients on a low flame for 5-7 minutes. Then, let their aroma circulate in your whole kitchen. 
  • Now take a small mixer/ blender, and blend to convert them into powder. Transfer this to a small bowl.
  • Time to marinate the chicken with ginger garlic paste, salt, and some red chili powder. Let it transfer to the fridge with a cling film.
  • Chop the one onion into medium pieces and blend the tomatoes into the puree. 
  • Heat a kadhai or pan, add desi ghee once it is hot enough, add garlic or ginger paste. 
  • When it turns golden in color, add chopped onion, cook for 5-7 more minutes, and add tomato puree and salt. 
  • Meanwhile, stir well; meanwhile, take a small bowl, add curd, turmeric, red chili powder, and mix them well. Cook this mixture for some time. 
  • Add marinated chicken, coriander powder, cumin powder, garam masala, and large chopped onion pieces in the kadhai. 

Cook this for 30-45 minutes, or until the chicken is cooked. Once cooked, sprinkle coriander leaves, mint leaves, green chilies, kasoori methi, and pour cream over the chicken. Serve hot with roti or rice.
