Chef Vikram Shokeen Shares His 2 Recipes For Sehri

The sehri meal plays a crucial role for the Islamic devotees who observe Roza or fast for the whole day during the holy period of Ramadan. This food must be chosen carefully, preparing the body with the required protein, hydration, and nourishment to sustain prolonged fasting without even drinking water. Chef Vikram Shokeen, The Ashok, also agrees to it. He says that the Sehri meal is significant for several reasons, like keeping the people on fast get going by providing vital nutrients and energy. He picked two recipes to share which would do the needful.

"I have chosen chicken nuggets and mutton rogan josh for Sehri meal mainly because of its popularity, convenience, and ability to provide a satisfying and nutritious meal during the fasting period," mentions Chef Vikram.

Mutton rogan josh is a flavorful and hearty dish in a rich, comforting meal perfect for Sehri. Protein-rich foods like chicken nuggets can help people feel full and energised for extended periods. "In the early hours when people set to fats for the remaining day, both chicken nuggets and mutton rogan josh may keep them satiated for longer and at ease," he adds.

Recipe for Chicken Nugget

Chicken nuggets are convenient and tasty at the same time. It is one of the favourite fast-food, particularly among children. They are formed of little chicken pieces that have been battered and fried. Ketchup or barbecue sauce is frequently supplied as dipping sauces.

Ingredients

  • 250 grams of chicken breast
  • ⅓ cup all-purpose flour
  • 3/4 cup breadcrumbs
  • ⅓ teaspoon salt
  • 1 egg
  • 1 tsp ginger garlic paste
  • 3/4 teaspoon mixed spice rub
  • 3/4 teaspoon black crushed pepper

Method 

  • Cut the chicken breast into cubes about 1 to 1 ¼ inch size
  • Transfer the chicken pieces to a bowl, blend in the ½ teaspoon black pepper powder, mix spice rubs, ½ teaspoon garlic powder, ½ teaspoon mix spice rubs, ⅓ teaspoon salt and give all the ingredients a thorough mix
  • In another bowl, add the rest of the seasonings along with the flour and combine well
  • Break one egg into a bowl, and using a fork, beat it thoroughly
  • In another bowl, pour the breadcrumbs
  • Keep these 3 bowls containing flour, egg and breadcrumbs in a line
  • Flour the chicken and then dip it in an egg. Give it a coating of breadcrumbs. Press each nugget down gently with your fingers so that the breading sticks well. Rep for the remaining chicken nuggets.
  • While they are resting for 10 minutes, heat the oil in a pan for deep frying.
  • Start frying in batches, be careful not to crowd the pan.
  • Fry the chicken nuggets until they are a light golden brown on one side, then gently flip them over to finish cooking the other side.
  • Put them on a wire rack or a paper towel.

Serve them hot with your preferred dip or sauce.

 Mutton Rogan Josh Recipe

Mutton Rogan Josh is a flavourful and hearty dish often consumed during Ramzan. Although Mutton Rogan josh is an ancient Indian dish, many Foreigners have come to appreciate its distinctive flavour and texture. Tender mutton is cooked in a fiery tomato-based stew with a blend of Indian spices to create this tasty and aromatic dish.

Ingredients

  • 250 gms mutton with bone
  • 100 gms onions sliced
  • 75 gms tomatoes chopped
  • 05 gms whole garam masala
  • 15 gms ginger garlic paste
  • 03 gms red chilli powder (Kashmiri)
  • 01 gms turmeric powder
  • 15 gms coriander powder
  • 05 gms cumin seeds
  • Salt to taste
  • Coriander leaves chopped
  • 1 gm finely chopped ginger

Method

  • Heat cooking oil in a thick bottom pan and add whole garam masala. Fry till it begins to crackle. Add onions and ginger garlic paste, and fry till it turns golden brown in colour
  • Add tomatoes and cook for 3-4 minutes,
  • Blend in the mutton and cook for another 4-5 minutes. Season it with the garam masala powder
  • Bring to a boil, simmer and let it cook for 15-20 minutes
  • Keep cooking on slow fire till mutton is tender and oil leaves the masala

Serve it by garnishing it with chop coriander and ginger juliennes with rice and salad!

Chef Vikram Shokeen also recommends people observing Roza to stay hydrated by including milk and water-based beverages like nimbu paani, jal jeera, chaach and lassi in the Suhoor meal. He has some pro tips for preparing sehri food spread. One must ensure that it's nutritious and satisfying. Plan it ahead, ensuring a variety of foods are available that can provide sustained energy throughout the day.
