Chef Hitesh Shanbagh Shares Innovative Mango Recipes For Summer

The king of fruits is highly versatile, making it an appropriate ingredient for savouries and sweets. Whether you are looking to make a bowl of tangy curry or chatpata salad, mango can be the star ingredient in all these recipes.

Mango And Avocado Toast

This one is a regal recipe for which you need to put extra effort into plating. If it looks good, your guests won’t be able to resist themselves from digging into it. You can also make it for breakfast and enjoy a hearty meal.

Ingredients

  • 1 slice of sourdough bread
  • 1/2 alphonso mango
  • 80 gm cream Cheese
  • 10 gm dill leaves
  • 10gm jalapeno
  • 1/2 avocado

Procedure

  1. Toast the sourdough slice till properly toasted and crispy.
  2. Mix cream cheese, jalapeño and dill leaves and empty it in a piping bag.
  3. Apply the above mixture to the toast.
  4. Thinly slice the mango and avocado.
  5. Arrange the mango and avocado slices on the bread.
  6. Pipe the mixture on the avocado and mango slices.
  7. Add dill leaves on top for garnish.

Tiger Pattern Mango Sushi Roll

This dish will definitely make you look like a seasoned chef if you ace the recipe. Up until now, you must have eaten sushi comprising rice, vegetables, meat, and seawood. However, with this recipe, you will be able to add a fruity scent and notes to the dish.

Ingredients

  • 100 gm sushi rice
  • mame nori sheet
  • 80 gm mango slice
  • 50 gm avocado
  • 20 gm jalapeno
  • 40 gm cream cheese
  • 20 gm Japanese cucumber
  • 5m cilantro leaves
  • 5 gm wasabi
  • 10 gm light soy sauce
  • 10 gm truffle oil
  • Nori sheets

Method

  • Place the mame nori sheet onto a bamboo sushi rolling mat with sesame seeds down.
  • Mix the cooked rice with the vinegar and spread an even layer over it. Leaving about 1 ½ inches open on the top 
  • Layer the mango, cream cheese, avocado, jalapeno, cucumber, and cilantro leaves.
  • Lift the bottom of the sheet up and over the filling, keeping the ingredients as tight as possible. Continue to roll until the rice is exposed.
  • Lightly brush the top edge of the sheets with a little water and stick the strips of nori sheet. Continue to roll until sealed.
  • Using a sharp, long knife, make cuts about 1 ½ inches.
  • Arrange the rolls cut-side up and serve with truffle soy and wasabi.

Asian Mango Salad

If you are tired of green vegetables or roasted meat salad, try mango salad. Not only does it taste delicious, but it also adds nutrients to your body. Following Chef Hitesh Shanbagh’s recipe, you can make this delicious salad at home and serve it to your guests.

Ingredients 

  • 10 gm dynamite sauce 
  • 150 gm Romaine lettuce 
  • 100 gm mushroom 
  • 1 scoop parmesan ice cream 
  • 2 gm microgreens
  • 150 gm mango 
  • 10 gm sesame oil
  • 2 gm nori sheets
  • 5 gm tongarashi powder 
  • 2 gm coriander root

Method

  • Make a spicy dynamite sauce using sriracha and mayonnaise.
  • Saute the mushrooms in sesame oil and sprinkle with togarashi spice and shredded nori.
  • Remove the skin, cut the mango into cubes, and toss them in sesame oil and a pinch of togarashi.
  • Chop the lettuce into bite-sized pieces and toss them with the dynamite sauce.
  • Top the lettuce with the mushrooms and mango cubes and a dollop of parmesan ice cream.
