Chef Daniel Humm, chef/owner of Eleven Madison Park has been seen out and about in Delhi this week with Aditi Dugar, and the team of Masque. Humm, who secured his position among the world’s culinary elite by securing and keeping 3 Michelin Stars since 2012 has made his way back to India, and the rumour is that a plant-based collaboration between him and Chef Varun Totlani in Mumbai is on the way.
The Swiss origin chef recently shared a photo at Bukhara, the North Indian restaurant at the ITC Maurya Delhi which was listed among Asia's 50 Best Restaurants. Here he gazes lovingly at a giant Bukhara naan which was then devoured along with Bukhara’s famed tandoori offerings. In the caption he says, “Happy to be back in this magical country. Thank you @aditidugar and the team @masquerestaurant for organizing our culinary journey here in India. #makeitnice”
But his adventures didn’t stop there. Food columnist and events executor Rupali Dean also shared a photo of Humm really getting into his Indian element, tossing samosas in hot oil at a street side stall while crowds look on in amusement. Truly, if you’re trying to get in touch with the soul of India’s cities, there’s no better place to start than with its street food. He also enjoyed a ride around the city in a pedal rickshaw with stops to enjoy the spice stalls and a hot chai.
And it seems like his journey is taking him even further afield as Michael Pyers, the Chief Culinary Officer at his restaurant group Make It Nice tagged him in a series of images from Srinagar, concluding with a beautiful sunset on Dal Lake.
The upcoming collaboration between Eleven Madison Park and Masque entitled, 'A Nod To Nature's Best', is set to feature a 10 course plant based menu that bridges the gaps between their approaches to food, cooking and cuisine. The exclusive dining experience is slated to take place on the 1st and 2nd of September at Masque Mumbai and is sure to be a fusion of culinary talent.
