Chaitra Navratri 2023: Paneer Kuttu Cheela Recipe Protein Boost

Fasting is considered by many as a healthy method of detoxifying the body and a Navratri fast, whether it’s Chaitra Navratri, Sharadiya Navratri or Gupt Navratri, is definitely one of the best forms of healthy fasting out there. But the trick with doing the Navratri fast right is ensuring that all the foods you do eat are sattvik while also making your meals balanced. The trouble with fasting in India is that most people tend to gravitate towards fried foods to satiate hunger pangs, which defeats the purpose of the Navratri fast. 

If this is an issue you face during Navratri fasting and want to overcome it, then this Loaded Paneer Kuttu Cheela recipe is just what you need. Both Kuttu and Paneer are sattvik ingredients, but more than that, they are packed with proteins. Studies show that the protein in buckwheat or kuttu is not only of very high quality, but also packed with rich amino acids called lysine and arginine. Not only is buckwheat a great source of energy, but it also helps reduce cholesterol levels, the risk of gallstones as well as the risk of colon cancer! A powerful superfood indeed! 

While almost all Kuttu recipes are therefore healthy, adding Paneer just lifts it up to extraordinary proportions. Paneer is not only packed with proteins, but also with calcium and other essential minerals. It is one of those ingredients that not only provides a lot of energy but also tastes delicious. So, a Loaded Paneer Kuttu Cheela is not only going to provide you with a boost of protein but is also perfect for snacking as well as a meal. The dish is totally sattvik and absolutely yummy, and what’s more, it is also very easy to whip up. Here’s the recipe.

Ingredients: 

1 cup buckwheat flour 

1.5 cups water 

½ tsp rock salt 

½ tsp black pepper 

Oil, for frying 

For the Paneer stuffing:- 

½ cup paneer, grated 

¼ cup carrots, finely chopped 

2-3 green chillies, finely chopped 

½ tsp black pepper powder 

½ tsp roasted cumin powder 

½ tsp rock salt 

2 tbsp coriander leaves, finely chopped 

Method: 

1. To make the stuffing, place the paneer in a large bowl. 

2. Add the carrots, green chillies, black pepper powder, roasted cumin powder, rock salt and coriander leaves. 

3. Mix well and set aside until needed. 

4. Place the buckwheat flour in another bowl. 

5. Add the rock salt, black pepper and then gradually add the water to make a smooth, slightly thin batter. 

6. Heat a non-stick pan and brush it with some oil. 

7. Pour a ladle of the Kuttu Cheela batter into the pan then spread it around to form a circle. 

8. Cook on a low heat for 2-3 minutes or until the Cheela is cooked on one side. 

9. Carefully flip the Kuttu Cheela and cook the opposite side as well. 

10. Place a spoonful or more of the paneer stuffing on one side of the Kuttu Cheela, then fold the other side over. 

11. Remove the Loaded Panner Kuttu Cheela onto a plate and prepare the remaining batter and stuffing in the same way. 

12. Serve the Loaded Paneer Kuttu Cheela hot with a side of yoghurt.
