Caribbean Chicken: A Fragrant Curry With Exotic Flavours

This recipe requires Caribbean curry powder which can be easily prepared at home. You need to blend some herbs and spices like coriander seeds, cumin, mustard seeds, etc in the mixer. 

Here is how to make Caribbean chicken curry. 

Ingredients

  • 6 boneless chicken thigh
  • 3 tablespoons  olive oil
  • 1 onion
  • 2 tomatoes
  • 2 spring onions
  • 2 cloves of garlic ( chopped )
  • A handful of dried thyme
  • A handful of coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cinnamon 
  • 1 teaspoon cayenne
  • 2 tablespoons Caribbean curry powder 
  • 1 cup tomato ketchup 
  • 2 cups water

Method

  • Put onion, spring onion, garlic,  thyme, coriander and tomato in a food processor.
  • Blend until smooth. If you do not have food processors, you can finely chop these ingredients by hand.
  • Take a medium sized saucepan and add oil. Add the blended mixture and cook for 2 to 3 minutes.
  • Add tomato ketchup,  cinnamon, cayenne, black peppers and salt to the pan. Bring the sauce to a boil over medium heat and cook for six to eight minutes.
  • Then add the chicken pieces and 2 cups of water. Then add Caribbean curry powder. Let it boil in low heat, partially cover the pan and cook for 1 hour, stirring 2-3 times. 
  • Once cooked, garnish it with coriander.

Tip: If you like to eat chicken curry with lots of gravy, you can add more water. An alternative way of cooking Caribbean chicken is by chopping large slices of each vegetable and cooking it without puree.  

You can serve the  Caribbean chicken curry with brown rice.
