Ingredients:
For Stuffing
1. 2 medium potatoes
2. 1 teaspoon chopped green chillies
3. 1 tablespoon coriander leaves
4. 2 teaspoons mint leaves
5. ¼ teaspoon red chilli powder
6. ¼ teaspoon Garam Masala
7. ½ teaspoon dry mango powder (amchur powder)
8. salt as required
For Batter
1. 1 cup besan (gram flour)
2. ½ teaspoon carom seeds (ajwain)
3. ¼ tsp red chilli powder
4. 1 to 2 pinches turmeric powder – optional
5. ¼ tsp Garam Masala
6. 1 pinch asafoetida (hing)
7. 1 to 2 pinches baking soda
8. ½ to ⅔ cup water
9. salt as required
Other Ingredients
1. 4 to 5 whole wheat bread slices
2. oil for deep frying
1. Use a pressure cooker to boil or steam the potato
2. Peel the potato once it has softened up. Grate, then keep aside. Another option is to mash and keep aside
3. To the mashed potatoes, add the coriander, mint, red and green chilli powders, amchur, turmeric, and salt
4. Very thoroughly mix the mashed potatoes with the herbs and spices. Adjust the seasonings as necessary after checking
5. Mix the besan (gram flour), ajwain, red chilli powder, garam masala powder, asafoetida, baking soda (if using), and salt in a bowl
6. Now, add about 1/2 cup of water and thoroughly combine all the ingredients
7. The batter shouldn't be very thick or thin. Add more water if it's too thick
8. Add 1–2 tablespoons of heated oil in the batter. Mix well. For one to two minutes, whisk quickly and continuously to integrate some air into the besan batter
9. Slice the bread into triangle- or rectangle-shaped pieces and arrange them on the chopping board
10. Spread an even layer of the mashed potato mixture on the bread
11. A second slice should be placed on top of the potato-stuffed bread slice. You currently have a triangle bread sandwich. Press the sandwich slightly
12. Dip the entire sandwich into the besan batter
13. Coat the packed bread sandwich equally with the besan batter. Treat the sandwich with care. Be careful not to soak the stuffed bread sandwich in the gram flour batter for a long period of time since the bread may break
14. In hot oil, deep fry the batter coated sandwich right away
15. Splash oil over the bread pakoras and cook them on a medium temperature while flipping them occasionally
16. Fry the pakora till it turns crisp and golden
17. Place them on kitchen paper towels to absorb any extra oil
