This Black Rice Salad is the ideal side dish for a dinner party or a quick and nutritious evening meal. This colourful salad recipe combines wholesome ingredients, Asian spices, and the nutty taste of forbidden rice. It only takes a few minutes to put together and is naturally gluten free if you use black rice in your meal preparation or have some on hand. Black rice is so adaptive that it may be used as a main meal or added to soups and salads to make them substantial and healthy. It is also known as Emperor's rice, Forbidden rice, or Purple rice. It has a wealth of health advantages and is brimming with antioxidants.
Black rice, which was historically uncommon and "forbidden" to everyone but the Chinese emperor, was cross-pollinated with an Italian risotto type in the 1990s to produce the stunning rice known as black venus, which is now widely accessible. Around the same time, a Japanese seed expert mixed broccoli and Chinese kale to create a new vegetable whose stem is just as tasty as its tip.
Ingredients
1. 250 gms Black Rice (cooked & drained)
2. 1 cup Green Peas (boiled)
3. 1 cup Corn (boiled)
4. 1 cup Red Bell Pepper (chopped)
5. 1 cup Yellow Bell Pepper (chopped)
6. 1 cup Capsicum (chopped)
7. 1 Onion (minced)
8. 1/2 tsp Garlic Paste
9. 1/2 tsp Ginger Paste
10. 2 tbsp Chilli Garlic Paste
11. 2 tbsp Honey
12. 1 tsp Sesame Seed Oil
13. Salt (as required)
14. 1/2 tsp Black Pepper Powder
15. 4 tbsp Olive Oil
16. 1 tsp Vinegar
17. 1 tsp Red Chilli Powder
18. 1/2 tsp Black Pepper Powder
19. Salt (as required)
20. Coriander Leaves (chopped)
Method of Preparation
1. To cook the black rice on the stove, combine the rice, water, and salt in a medium pot. It should boil for 20 to 25 minutes, or until the rice is cooked through.
2. Drain and allow to cool in a strainer with fine mesh. As an alternative, you can prepare black rice in a rice or pressure cooker
3. Add green peas, corn, red bell pepper, and yellow bell pepper. Now, give a gentle stir for mixing
4. In a small bowl, combine the rice vinegar, shallot, minced onion, honey, chilli garlic sauce, garlic, and ginger. Whisk to combine. While continuing to whisk, slowly pour in the sesame and olive oils to fully incorporate the dressing's components
5. Now, Rice, sugar snap peas (or shelled edamame), radishes, bell pepper, and cilantro should all be added to a big salad bowl. Give it a gentle toss after dressing it with a drizzle
6. Add some freshly chopped coriander to garnish
7. A black rice salad bowl is all set to serve!
