Ingredients

  • 1 liter full-fat milk
  • 4-5 oranges
  • 1/2 cup Basmati rice
  • 1/2 cup sugar
  • A pinch of salt
  • 2-3 tablespoons chopped cashews
  • 2-3 tablespoons raisins
  • 1 tablespoon ghee

Instructions

  • Rinse the rice thoroughly and soak it in water for 30 minutes. Drain the water and keep the rice aside.
  • Peel the oranges and remove the seeds. Squeeze the oranges to extract the juice and keep it aside.
  • In a heavy-bottomed pan, add the milk and bring it to a boil. Once the milk starts boiling, add the soaked rice and stir well.
  • Cook the rice and milk mixture on medium heat, stirring occasionally, until the rice is cooked and the mixture thickens (around 25-30 minutes).
  • Add the sugar and salt and stir well until the sugar dissolves completely.
  • Now, add the orange juice and mix well. Cook the mixture for another 5-10 minutes until the kheer thickens.
  • In a separate pan, heat the ghee and fry the chopped cashews and raisins until golden brown. Add the fried cashews and raisins to the kheer and mix well.
  • Remove the kheer from heat and let it cool down. You can serve the kheer warm or chilled as per your preference.
