A special Indori breakfast dish adorns the streets of Indore during the monsoon season. If you haven’t been to Madhya Pradesh yet, you may not be familiar with this hearty corn dish that is served hot at the crack of dawn. While it may seem like a simple and basic preparation at first, in reality, the delicious flavours will keep you coming back for more.
Wondering what we are talking about? The Bhutte ka kees. Bhutta is corn, and the word "kees" means grated in Hindi. As a result, MP prepares this grated corn dish known as "bhutte ka kees." Now American corn, where sweet corn kernels are boiled and tossed in spices, is quite common across the country and sold on the streets as well.
However, bhutte ka kees is nowhere close to that. The Indore-is decided to give it a local touch by grating the corn into a fine mash and then tossing it in a host of spices while stir-frying the mix. Skimmed milk is added to the cooked mixture to give it a hint of sweetness. Furthermore, a dash of lime juice, green chillies, and mustard seeds complement the flavours of this dish, and a garnish of grated coconut and finely chopped corriander completes it.
