If you’d like to whip up your own bruschetta treat at home try this simple recipe:
Ingredients:
- 4-5 ripe tomatoes, diced
- 1-2 cloves of garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon balsamic vinegar (optional)
- Salt and pepper to taste
- Baguette or Italian bread, sliced
- Olive oil for brushing
Method:
- In a bowl, combine the diced tomatoes, minced garlic, chopped basil, extra-virgin olive oil, and balsamic vinegar.
- Mix well to combine, and season with salt and pepper to taste. Allow the mixture to sit at room temperature for about 15-20 minutes to allow the flavours to meld.
- Brush the bread slices lightly with olive oil on both sides.
- Place the bread slices on a baking sheet or grill pan, and toast them under the broiler or on the grill until they're golden brown and slightly crispy.
- Once the bread slices are toasted, you can rub the surface of each slice with a clove of garlic for extra flavour
- Spoon the tomato mixture generously over the toasted bread slices. Allow some of the juices to soak into the bread.
- Enjoy your delicious homemade bruschetta!
