Beyond Khaar And Pitha: Try Assamese Savoury Kordois For Snack

Being a significant part of India’s culinary culture, Assamese cuisine is all things moreish and delectable. Although Assamese cuisine is diverse and inclusive, very few people are aware of the dishes that are hidden in the core of the state. One such dish is Assamese Kordoi which is a snack option with both- sweet and savoury versions. Although both are equally loved and savoured in the state, we have brought the recipe for the savoury version of the snack today. Made with whole wheat flour, some veggies and typical Indian spices, Kordoi can be a little tricky to shape for first-timers. Want to try it but are scared of the folding technique? Ingredients:

· 1 ½ cup whole wheat flour 

· 1 onion, finely chopped 

· 1 carrot, grated 

· 3 tbsp finely chopped coriander leaves 

· 1 tbsp ghee 

· 1 tsp cumin seeds 

· 1 tsp carom seeds 

· 1 tsp nigella seeds 

· 1 tsp red chilli powder 

· Salt, according to taste 

· Oil, for deep-frying

Method: 

1. Add all the dry ingredients to a large mixing bowl and mix well with your hands to combine. (rubbing the ingredients with your palm is a better option) 

2. Knead it into a dough by gradually adding water to it. 

3. Divide the dough into small-sized balls. 

4. Take a dough ball and flatten it on a dusted surface. 

5. Roll the flattened ball into a disc. 

6. Keeping the top and the bottom intact, make four slits in the disc. Hold the disc from both the edges and twist it by pinching the edges. 

7. Repeat the same with the rest of the dough balls. 

8. Heat oil in a kadhai and wait till the oil is hot. 

9. Fry the shaped Kordois on medium flame till they are golden brown. 

10. Remove them from heat and drain the excess oil on a paper towel/absorbent towel. 

Regionally, savoury Kordois are served with a sweet and tangy sauce or chutney. You can serve them with a condiment of your choice. Serve them hot with Chai. Bon Appetit!
