Besan Ka Sheera Is The Warming Winter Drink You Need

In old Punjabi households Besan Ka Sheera is likely to be shoved into your hands at the slightest sign of a sniffle. And much like the other hundreds of old-school ayurvedic recipes, this one really works wonders. It’s an age old mixture of ghee, besan (chickpea flour), milk of your choice, sugar, and spices. Sweet, spiced and creamy thick, it works like a charma and tastes great while doing so.

Ingredients

  • 1 tablespoon ghee
  • 3 tablespoons besan
  • 1 cup milk of choice
  • ¼ teaspoon cardamom
  • ¼ teaspoon turmeric
  • Pinch of black pepper
  • ¼ cup jaggery or coconut sugar or sweetener of choice to taste

Method

  • In a small pot melt the ghee until its liquid and then sift in the besan flour.
  • Mix them together thoroughly until they’re combined and the flour starts turning a dark golden colour and gives off a nutty aroma.
  • Stir in the spices and then add the milk of your choice and some sugar or jaggery for sweetness. 
  • Mix it in well until everything has dissolved.
  • Keep it at a medium heat stirring occasionally until the milk is hot and then pour it into mugs.
