These light and fluffy pumpkin pancakes are the perfect way to warm you up on chilly fall mornings. They feel and taste exceptional because they are filled with pumpkin and have a dash of cinnamon and vanilla, but they come together quickly. The batter is rather thick because of the buttermilk and pumpkin, but it will spread. When frying the pancakes, make sure there is enough space between them. Here's how you can make these pancakes at home:


Ingredients

 1 1/2 cups flour

 2 tablespoons melted butter

 1/2 teaspoon pure vanilla extract

 1 1/4 cups milk

 2 teaspoons pumpkin pie spice

 1 egg, beaten

 1/2 teaspoon salt

 1 cup pumpkin puree

 2 tablespoons brown sugar

 3 teaspoons baking powder

Method:

 Gather all the ingredients required to make the pancakes.

 In a bowl, thoroughly combine the flour, baking powder, salt, and pumpkin pie spice.

 In another bowl, stir the brown sugar, egg, milk, pumpkin puree, vanilla extract, and melted butter until thoroughly combined.

 The dry components should only be lightly moistened before being added to the wet ingredients. Avoid overmixing.

 Cast iron or a non-stick skillet should be heated over medium-low heat. When it's heated, add butter or cooking spray and pour 1/3 cup of batter into the skillet. Flip after 1 to 2 minutes of cooking. Cook the food for another few minutes, or until it is thoroughly done.

 The pancakes should be cooked until they are perfectly made. Serve the whipped cream alongside the finished pancakes.
