Out of all the South Indian recipes that have been transformed into healthier versions, Millet Dosa or Kambu Dosa remains on the top. Regionally called Kambu Dosa, Millet Dosa is made with Bajra or pearl millet. Most people hesitate to try transformed dishes because of the belief that the texture and the taste of the original dish get compromised but that’s not the case with this dish. Kambu Dosa is as delicious and crispy as regular dosa but healthier. Rich in carbs, proteins, good fats and iron, Kambu Dosa is a perfect breakfast option. INGREDIENTS
- ½ cup millet
- ½ cup urad dal
- ½ cup rice
- ½ tsp salt
- ¼ cup ghee/oil
- Water, as required
METHOD
- In a bowl, add rice and millet and wash till the water runs clear. Soak them for at least 4 hours.
- In another bowl, add the urad dal and repeat the same process as the first one.
- After the specified time, add the dal to a blender and blend till it is smooth and frothy by gradually adding water.
- Add millet and rice to the same jar and blend till it’s smooth.
- In a large bowl, add both the batters along with salt and mix well to combine.
- Cover the bowl and ferment it for 7-8 hours.
- Once fermented, the batter turns light and airy.
- Heat a dosa tawa and grease it with some ghee/oil.
- Take a ladle full of the dosa batter and spread it to make a thin dosa.
- Drizzle some oil/ghee around the edges and flip to the other side.
- Remove it from heat once the dosa is cooked and serve.
You can have these dosas with chutney, sambar or any other condiment of your choice and have them as breakfast.
