Made with a host of spices after marinating minced mutton meat and grilling or pan-frying, Galawati or Galouti Kebab are a must-try dish on Bakraeid and with Eid-ul-Adha 2021 just around the corner, we have the perfect recipe for you to try your hands on. Invented by the Khansamas of Nawab Asad-ud-Daula, Galawati Kebab are integral to Lucknow and its Nawabs but this Eid-ul-Adha you can easily make them at home following the recipe given below.
Ingredients for shahi masala:
Cashew nut 1/4 cup
Fennel seeds 1 tbsp
Black peppercorns 1 tbsp
Nutmeg (small) 1
Mace (small) 2
Star anise 2
Green cardamom 4-5
Cumin seeds 1 tbsp
Ingredients for kebab preparation:
Mutton mince 800 g
Fat 200 g
Green chilies 2-3
Green coriander 2 tbsp
Red chili powder 2 tbsp
Salt 1 tsp
Papaya paste 1 tbsp
Lemon juice 2 tbsp
Rose water 1/2 tsp
Kewra essence 1/2 tsp
Ginger garlic paste 2 tbsp
Fried onion 1 cup
Bread crumbs 1 cup
Prepared masala 3 tbsp
Coal + oil (for smoke)
Method for shahi masala preparation:
In a blender add cashew nut, fennel seeds, black peppercorns, nutmeg, mace, star anise, green cardamom, cumin seeds and blend into fine powder. Your masala is ready.
Method for kebab preparation:
In a chopper add mutton mince, fat, green chilies, green coriander, red chili powder, salt, papaya paste, lemon juice, rose water, kewra essence, ginger garlic paste, fried onion, bread crumbs, prepared masala and chop to make fine kebab mixture.
Smoke the mixture with coal for 1 minute. Now make the round shapes of kebab and make flat kebab with the help of your hands. In a pan heat oil and fry each side of kebab for 3-4 mins on low medium flame. Your kebab is ready.
The recipe takes only 10-15 minutes to prepare and 30-35 minutes to cook. It serves 3-4 people.
