Bajra Dosa: Crispy, Tasty & Healthy At The Same Time

Here is a simple recipe for bajra dosa which you can make at home with a few basic ingredients like salt, fenugreek seeds, pressed rice, and bajra. To prepare the batter for the dosa, these ingredients are ground together into a fine paste and mixed with water. You must remember that bajra can harden very quickly and easily, so you should use the batter to prepare the dosa as soon as possible. You will be able to soften the dosa for a while by adding urad dal to this recipe. 

Ingredients:

  • 1 cup - Pearl Millet (bajra)
  • 1/3 cup - Pressed Rice
  • Salt according to your preferred taste
  • 2 cups - Water
  • 1/4 cup - Urad Dal
  • 1 tsp - Fenugreek Seeds
  • 2 tbsp - Refined Oil

Method:

  • First of all, Wash and soak millet (Bajra), urad dal and fenugreek seeds in warm water for 4 to 6 hours or until doubled in size
  • Prior to grinding, soak the poha in 1/3 cup of water for 15 to 20 minutes
  • Now, drain the water from the dal and millet mixture and grind it into a fine paste using fresh water
  • Once done, grind the soaked poha as well and add it to the dal-millet paste and mix it well
  • Now you will have to leave the batter to ferment overnight or until you see tiny bubbles over the top of it
  • The next day, add salt as per your preferred taste and adjust the consistency to a spreadable thickness
  • Now heat a pan until hot and pour a ladleful of batter and spread it in a circular shape like regular dosa
  • Now add a few drops of oil to the centre and the sides, and cook until it turns golden
  • Once cooked, fold/roll and serve with sambhar, coconut chutney and peanut chutney to enjoy the best flavours of this recipe.
